You can have your potatoes and eat them too!
Potatos have gotten such a bad rap from all these low carb no carb diets. Well guess what? You know they grow in the ground, so that means they are not processed. They are full of potassium and other beneficial minerals. This year when you are making the mashed potatoes try boiling them whole(as opposed to chopping them in little bits), roasting, baking, or microwaving to keep more of those minerals in the potato.
